Additional info from a good friend:
Lay out an 8' x 10' tarp on the ground (the tarp will be your shelter) in the middle of the tarp lay out your sleeping bag and put pillow case in the sleeping bag along with 2 pairs of socks, undies, shirts & pants. (put coat in the pillow case at night). Fold one side of the tarp over the sleeping bag, then the other. Fold the bottom & top in & start rolling lengthwise. Tie w/cord (could be picket tie rope) & drape over back of saddle. Across the bed/shelter roll, stuff poncho for quick access. Use front saddle bags for food & water and rear saddle bags for the horse's food. In the front pouch remember a flashlight, utensils & 2 small packs of Kleenex. This should be all you need & it should weigh less than 30#.
Of course this is only a suggestion, you may know a better way.
